Oatmeal Banana Muffins

I warned you!  I tried a new recipe and it was a hit! Very soft muffins.  I made a double batch; half with chocolate chips and half with nothing added extra. Great for breakfast, snack or on the go!



Oatmeal banana muffins

Ingredients:

    * 1 cup flour
    * 1/2 cup rolled oat (I used steel cut)
    * 1 teaspoon baking powder
    * 1 teaspoon baking soda
    * 1 egg
    * 3/4 cup white sugar
    * 1/3 cup butter, melted
    * 1 1/2 cups mashed bananas
    * 3/4 cup raisins or nuts or chocolate chips

Directions:

   1.  Mix all together well.
   2.  Place in muffin liner.
   3.  This recipes is very easily doubled and tripled.
   4.  You can add nuts or chocolate chips too for a change. Mix all together, place in muffin liners.
   5.  Bake for 20-25 minutes at 325° (depends on size of muffins).

With the double batch I got 26 muffins.

Must try. Partly because I have about 15 bananas ready (almost black or black) on the counter. Partly because we need a little variety. My Hurricane gobbed it up the other night. Thanks again.

Yes he did! The double batch I made only lasted until Wed. b'fast. I know I need to make big batches...just don't have the freezer space to store them nor do I think they should be our only food item we eat for a week straight!
