Jam packed with yummy goodness, these did not last long around here!
1 C. Butter, softened
1 C. Granulated sugar
1 C. Packed brown sugar
1 t. Baking powder
1/2 t. Baking soda
2 Eggs
2 t. vanilla
2 C. All purpose flour
1/2 c. Whole Wheat flour
2 C. Quick cooking rolled oats
2 C. Coconut
2 C. dried cranberries (or raisins, dried cherries or mixed dried fruit bits)
Preheat oven to 375*F. In a large mixing bowl beat butter with electric mixer on medium to hig speed for 30 seconds. Add granulated sugar, brown sugar, baking powder, and baking soda. Beat until combined, scraping sides of bowl occasionally. Beat in as much of the flour as you can with the mixer. -I had no problems with my stand mixer handling all of the flours & oats and mixing everything together - Stir in any remaining flour. Stir in rolled oats, coconut, and dried cranberries.
Drop dough by rounded teaspoons 2 inches apart onto an un-greased cookie sheet. Bake for 8-10 minutes or until edges are light brown and centers are set. Cool on cookie sheet 1 minute. Transfer to a wire rack and let cool.
This is the recipe I used. However, this is a doubled batch. Feel free to cut in half if that fits you better. The cookies do not spread out much, so make them the size you like!
